If you're looking for a way to cut down on refined sugar while enjoying the taste of banana bread, well continue reading on!
I decided to tweak my favourite banana bread recipe and turn them into breakfast bagels.
They're soft and moist. They're good enough to be savoured on their own.
I love having these banana bagels for breakfast, with some coconut cream "cheese" and slices of strawberries.

Prep time: 5 mins
Bake time: 30-35 mins
Total time: 40-45 mins
INGREDIENTS:
2 cups all-purpose gluten-free flour (or regular all-purpose flour)
2 tsp xanthan gum (omit if using all all-purpose flour)
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3/4 cup granulated erythritol or lakanto
1/3 cup coconut oil
2 eggs
3 super ripe bananas, mashed
optional: 1/2 cup chopped walnuts, pumpkin seeds or semi-sweet dark chocolate chips
Instructions:
1) Preheat oven to 325 degrees F.
2) In a bowl, combine and whisk flour, baking powder, and baking soda.
3) In another bowl, mix coconut oil and erythritol. Pour in mashed bananas. (Can add in your chopped nuts here).
4) Combine the wet mixture together with the dry mix until well combined.
5) Taking your donut tray, spray it with cooking olive oil.
6) Pour the batter into a piping bag or Ziploc with one corner trimmed off. Pipe the batter into the donut mould.
7) Bake for 30-35 minutes (or until toothpick comes out clean).
8) Slice them in half and enjoy them like regular bagels!
Darlene's Notes & Tips:
⭐️ This recipe works with gluten-free all-purpose flour or conventional all-purpose flour. If you choose gluten-free flour, be sure to add xanthan gum which replaces the "gluten".
⭐️ You can opt for oat flour (blended rolled oats). It will come out quite soft. So I suggest using 2.5 cups of oat flour + 2 tsp of xanthan gum.
⭐️ Coconut sugar is another great alternative to white table sugar. Note: it will be much sweeter than erythritol.
⭐️ I find that a plant-based cream cheese made from coconut or cashews pairs really nicely with banana bread.
