About Me
Welcome to my eportfolio! I am a Certified Nutritional Practitioner, having earned my designation from the Institute of Holistic Nutrition in 2020. Currently, I am pursuing my Health Science - Workplace Health & Wellness degree at Humber College. I am in my 4th year of the Health Science program.
With a deep yearning for personal growth, I took a leap outside of my comfort zone to share my health and beauty journey on social media (my Instagram page and Pinterest board). It was at the beginning of 2021 that this site, GLOW BY DARLENE, was born. From meal-prepping on a budget to unnoticeable healthy food swaps to holistic beauty practices, I have a curious mind that loves to keep learning. Feel free to check out my BLOG page to learn more about my favourite health topics and colourful recipes. Taking this leap granted me valuable opportunities to collaborate and create content for numerous nutrition and beauty brands like Honibe, SMOOV, Teangle, Etymologie, SureThik, Living Libations, and Organika.
Apart from being a full-time student and posting on social media, I am also very passionate about creating meal plans for my friends and family. I enjoy enriching my nutritional knowledge while educating those around me about eating the rainbow, developing a positive relationship with all foods, and advocating mindful eating habits. I must mention that you'll most likely find me spending hours scavenging through Costco, literally fascinated by new food finds. Other days, I'm blasting my headphones while jumping on my mini-trampoline, spending an hour or two practicing a hair style on my mannequin, or (the obvious) making a colourful mess in the kitchen.

Institute of Holistic Nutrition (IHN)
AMB 02: Ayurveda: Mind/Body Healing
Ayurveda is the oldest healing system in the world. This course incorporates the philosophy of Holistic Nutrition with spiritual and psychological approaches towards attaining optimal health, through the connection and benefits of sound body and mind.
NR 006: Advanced Nutrition Research
Emphasis in this course is given to statistical research techniques used by academics and practitioners in the field of nutrition. This course examines ethical considerations, appropriateness, reliability and validity of research designs where students are encouraged to critically analyze research literature in this field.
HAP 01: Human Anatomy & Physiology
This course includes the study of normal anatomy and physiology of the human body and the interrelationship between body systems with a focus on integrative and homeostatic control mechanisms. beginning with the cell to the organization of the cell into organs. Specific topics covered are transport mechanisms, lymphatic system, gastrointestinal tract, endocrine system and the reproductive system.
BM 002: Body Metabolism
This course provides a comprehensive understanding of what the body does with the food we eat by examining metabolic reactions used to obtain energy from carbohydrates, protein and fat as well as reactions used to rid our body of wastes such as urea and uric acid. Emphasized in the course is the key role of the liver in metabolism.
NLS 010: Nutrition Through the Life Span
Nutrient needs and nutritional status for growth and development, high-risk pediatric groups, infant childhood allergies and diseases, men's/women's health concerns, and geriatric nutrition challenges.
NS 003: Nutritional Symptomatology Part 1
Understand clinical assessment of nutritional status by interpreting physiological symptoms and their relationships to nutritional deficiencies and excesses. Students will develop foundational protocols for balanced nutritional health by applying essential principles of biochemical individuality and how this plays a critical role in determining optimal nutritional requirements.
NS 003 Nutritional Symptomatology Part 2
Learn how proper nutrition can protect against, reverse and/or retard many ailments like osteoporosis, diabetes, atherosclerosis and high blood pressure, arthritis, cancer, anemia, kidney disease and colon cancer. Current research developments on phytochemicals, antioxidants and nutraceuticals will be explored.
NP 07: Nutritional Pathology
Pathology and symptomatology of conditions including those of digestive, gastrointestinal, respiratory, urinary, endocrine, musculo-skeletal, reproductive, cardiovascular, immune and nervous systems.
PHC 005: Preventative Health Care
This course teaches how proper nutrition can protect against, reverse and/or retard many ailments including osteoporosis, diabetes, atherosclerosis and high blood pressure, arthritis, cancer, anemia, kidney disease and colon cancer. Current research developments on phytochemicals, antioxidants and nutraceuticals will be explored.
HM 008: Herbal Medicine
Special emphasis on herbal terminology, levels of application (tonics/ heroics/specifics), chronic condition application, remedies for stress, detoxification, antiviral, antibiotic and immune-stimulating herbs.
POD 012: The Psychology of Disease
This course discusses “thought” and “emotion” and their relationship to energy and to disease. It challenges students to explore thought patterns that may be inhibiting their own health & balance and their ability to succeed at their goals.
NE 009: Nutrition and the Environment
Based on an underlying philosophy that environments maintain & promote health and individuals have a right to self-knowledge & self-determination. Topics include safety of our food supply, naturally occurring & environmental toxins, microbes & food poisoning.
CD 011: Comparative Diets
From intermittent fasting, food combining (colour-therapy/rainbow diet), Keto diet, Paleo diet, vegetarian/veganism, fruitarian, as well as cleansing and detoxification diets (caffeine, alcohol, and nicotine detoxes, juice fasts). Students will be able to identify individual’s dietary imbalances, and analyze macronutrient proportions to design custom health-promoting diets and lifestyle programs.
HFP 04: Holistic Food Preparation
Hands-on experience in preparation of breakfast “power-drinks”, nourishing soups, simple one-pot dishes and several Ayurvedic food items brings another dimension to the holistic curriculum. Emphasis is on proper preparation of grains through soaking, sprouting or fermentation and choice of healthy un-processed oils and fats to preserve and enhance the nutritional value of foods.

Digital Innovations Application: Remedial Ergonomics Website
Remedial Ergonomcs is one-stop resource platform for hair salon professionals and industry leaders alike to learn about workplace ergonomic safety at their convenience. The site focuses on addressing the workplace challenge of persistent MSD issues related to the salon industry through the lens of Social Cognitive Behaviour Theory and utilizing behaviour change techniques to promote ergonomic health behaviours and posture awareness.
Oral Video Presentation in Health Literacy: Pancreas & Type 2 Diabetes
Written Document in Health Literacy: Beauty Sleep & Skin Aging
This multi-part assignment calculates the readability levels, identifies plain language issues, and adherence to the Suitability Assessment of Materials (SAM) checklist. These oral and written documents have been revised to ensure health literacy comprehension by the general public.

Vision Statement
I am empowered to help others recognize and address the barriers to attaining optimal health and wellness. I understand that nutrition can be a complicated topic for the average person, in which I strive to explain the complexities simply. With my keen interest in the impact of diet on health, I am appreciating the process of creating nutritional wellness programs for schools, young families and in the workplace.
Through Humber’s Workplace Wellness Health Science program coupled with my nutritional designation, I anticipate gaining the confidence to take on leadership roles while integrating multiple health approaches applicable to employee health, workplace culture, engagement, and retention. I am also aware of the ever-growing need to increase access to nutritional knowledge, especially amongst our youth.
Career Goals
A big part of my health and wellness journey is spending hours in the kitchen trying out new recipes and turning unhealthy dishes healthy. Actively sharing my recipes and how-to videos on social media, I make an effort to show how easy, tasty, and achievable it is to eat healthily on a budget. From learning herbal medicine at the Institute of Holistic Nutrition and currently studying workplace health & wellness promotion at Humber College, nutritional science has fascinated me more than ever.
Combining my personal and educational experience, I look forward to learning how to design engaging health programs focusing on increasing access to nutritional knowledge for everyone. After graduating from Humber College, I envision myself fulfilling an active role teaching and mentoring students to be advocates of their own health and be confident in their health literacy as they grow up. I find that my purpose is to address and eliminate the main barriers to healthy nutrition: confusing media beliefs and food representations, ability to cook and prepare meals, perception of good versus bad food, finding the balance between nutrition & deliciousness, and affordability.
Understanding that the status of one’s health from birth and infancy sets the precedent for a person’s future health, I believe that it is important to emphasize healthy habits in school for as young as kindergarten and support young families. Ultimately, my focus throughout my post-secondary journey is to strategize ways to improve Toronto schools’ nutrition programs financially and innovate curriculum activities that make eating healthily insightfully fun. I also find fulfillment in helping families and their children develop healthy eating habits that can be celebrated and practiced. I recognize that my skills are well-suited when I engage with the younger demographics. I will also continue to explore the emerging demand for health & wellness in the workforce.
