Carrot Cake Baked Oats (no dairy, no eggs, vegan)

A healthy spin on carrot cake suitable for breakfast.




Feel free to top it off with homemade cream cheese frosting or a drizzle of maple syrup.




 

Serves: 16 small squares or 9 large squares

Prep time: 5 mins

Bake time: 20-25 mins

Total time: 25-30 mins

 

INGREDIENTS:

2 cups quick or rolled oats (I used quick oats)

2 cups plant milk

1/4 cup almond butter (I bought mine from Costco)

4 tbsp maple syrup (I like Costco's organic maple syrup)

2 tsp vanilla

2 Tbsp chia seeds (I bought mine on Amazon)

2 small carrots grated (or 1 large carrot)

1/4 cup pumpkin seeds (or your favourite seeds)

1/4 cup goji berries (or cranberries)

1 tsp baking powder

2 tsp cinnamon powder

1/2 tsp allspice

pinch salt

oil or butter to grease baking dish



Instructions:

1) Preheat the oven to 370 degrees F.

2) In a large bowl, mix all ingredients together. Let sit for 5 to 10 minutes so oats and chia seeds absorb the liquids.

3) Bake for 20 to 25 mins, or until top turns slightly brown.

4) If serving with cream cheese frosting, let sit for at least 1 hour till fully cooled off.

5) Cut into 4 by 4 squares or 3 by 3 squares. Enjoy!

Darlene's Notes & Tips:

⭐️ If you like the traditional way of serving oats in a bowl, you can bring all the ingredients to a simmer in a pot. Serve with a few dashes of cinnamon and maybe vanilla yogurt.

⭐️ You can change the texture of this carrot cake by grinding up the oats in a blender = oat flour. This may make the texture softer and fluffier with every bite.

⭐️ Instead of goji berries, you can opt for raisins or dried cranberries.

⭐️ Other suitable nuts and seeds are walnuts, almonds, and pecans.

⭐️ My favourite cost-friendly brands of chia seeds are from Amazon (click here) and Costco (click here)

⭐️ I love Traditional Medicinal's organic goji berries. They are a good price at Costco (unfortunately, I cannot find a link to them online). Otherwise, I also like the Elan brand (click here)
