Egg/Flour-Free (SUPER) Fudgy Brownies + Matcha White Chocolate

This is a special brownie recipe. Let me (re)introduce to you 2 superfoods in this post.



FIRST SUPERFOOD:


The nutritionist in me wanted to whip up a recipe that did not entail any refined flour or eggs (and unintentionally), was dairy-free (if we dismiss the white chocolate haha). It was all made possible by a special ingredient called canned chickpeas aka garbanzo beans.


Growing up, I've only eaten chickpeas in savoury dishes --- from seeing them in chilis, eating them in hummus and falafel, to buying a bag of The Good Bean from Shopper's Drug Mart or Superstore.


Beans (more accurately, legumes) in general are underrated superfoods in that they provide all 3 essential macronutrients: carbohydrates, protein and some fat.


Even more, they are amazing sources of

  • B vitamins (skin, hair, DNA-making, energy vitamins)

  • fibre (keep you satiated and digestive system functioning smoothly)

  • essential minerals like iron, phosphorous, magnesium, zinc, and selenium.

Canned chickpeas are a cheap and nutritious food. They make prepping meals seamless and efficient. As you will now learn, they are a versatile ingredient --- enjoyed as sweet or savoury.


Although the base is chickpeas, I promise you, the chickpea taste is so subtle because it will be masked by the cocoa powder and nut butter you use. Also, you will not experience any gassiness after eating a couple of bites!


THE OTHER SUPERFOOD:


Matcha, in particular ceremonial matcha! Side by side, you'll find that ceremonial matcha has this beautiful saturated green vibrance compared to culinary matcha. In addition, ceremonial matcha provides a richer, naturally sweeter flavour and aromatic fragrance. You can see that there is a significant colour difference, where the culinary matcha appears to be a much lighter green and yellowish.


To produce these amazing matcha qualities, the production techniques are definitely more laborious which means it sits on the more costly side.

Serves: 16

Prep time: 5 mins

Bake time: 20-25 mins

Total time: 25-30 mins

 

INGREDIENTS:

1 can of chickpeas, rinsed and drained

1/2 cup nut butter (I like peanut or almond butter)

3/4 cup maple syrup

1 Tbsp coconut oil

*** 1-2 Tbsp plant milk if needed

1/4 cup almond flour

1/4 cup cocoa powder (I got mines from Amazon)

1/4 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

3/4 white chocolate bar

1 tsp matcha powder (I used Teangle Ceremonial Matcha Powder)




Instructions:

1) Preheat oven to 350 degrees F.

2) In a blender or food processor, blend chickpeas, nut butter, maple syrup and coconut oil until smooth.

3) In a bowl, combine and sift dry ingredients.

4) Combine the blended chickpea batter with the dry ingredients. If the batter seems too dense, feel free to add in 1 to 2 tablespoons of plant milk.

5) In a baking dish lined with parchment paper, smoothen and even out the batter.

6) Bake for 20-25 mins.

7) While the brownies cool, you can get started with the matcha white chocolate. Using a double boiling method (a pot filled with shallow water and chopped chocolate in a glass cup), melt 1 bar of white chocolate.

8) Once all melted, remove from pot and pour in matcha powder. Mix very well.

9) Pour over brownies and be mesmerized by the colour!

10) Slice into squares. ENJOY!






Darlene's Notes & Tips:

⭐️ I suggest using a silicone spatula. The batter should not stick to it. That's when it's ready to go in the oven.

⭐️ I do not suggest blending all the ingredients in a blender. The dry ingredients will clum and stick together in the blender, needing you to keep scraping it down.

⭐️ You can swap out almond flour for oat flour. Or, you can make your own almond flour by food processing 1 cup of whole almonds. Store the rest in a mason jar.
