A simple low-carb waffle (or pancake) recipe that features collagen: my favourite type of protein that maintains skin youthfulness.
Douse in maple syrup and sprinkle on some cinnamon.
Prep time: 1 min
Cook time: 15-20 mins
Total Servings: 5 waffles
INGREDIENTS:
(wet ingredients)
2 eggs
1/4 cup unsweetened almond milk (or your fav plant-based milk)
1/2 tsp vanilla extract
1 Tbsp erythritol (I bought mine from Amazon)
(dry ingredients)
1/2 tsp baking powder
1/8 tsp salt
1 cup almond flour (I bought mine from Costco)
2 scoops Organika Collagen
Instructions:
1) In a bowl, mix and whisk the wet ingredients. Keep mixing till you get soft peaks.
2) In the same bowl, add in the dry ingredients. Combine well.
3) Cook them in your waffle maker. If cooking over the stove to make pancakes, cook them 1/3 cup at a time.
4) Douse in maple syrup or cinnamon. Enjoy!
