Healthy Baked Donuts & Buttercream Frosting

These are probably the healthiest donuts you'll ever eat in your lifetime!


⭐️ Important Notes ⭐️


This is a special recipe purposely made without gluten and added sugar. This was made possible because I used almond flour, coconut flour, and gluten-free baking powder. All of these replaced the need for regular baking flour.


Erythritol is probably new to most of you. It is a naturally occurring sugar alcohol that is found in our bodies also in fruits and vegetables. While it looks and tastes like sugar, it does not affect glucose levels. This makes it an ideal sweetener for diabetics and those following a ketogenic lifestyle.


If you do not like erythritol, you can easily replace it with regular granulated white sugar in this recipe. You can also opt for powdered icing sugar instead of powdered erythritol.






 

Serves: 11 to 12

Prep time: 5 mins

Total time: 25 to 30 mins

 

DONUTS INGREDIENTS

1 cup almond flour

1/2 cup protein powder (vanilla or chocolate)

4 Tbsp coconut flour

1/2 cup erythritol (or white granulated sugar)

1/2 tsp salt

4 tsp baking powder (gluten-free if needed)

4 eggs

1/4 cup coconut oil

1/4 cup water (or plant-based milk)

cooking spray or butter (to grease pan)



BUTTERCREAM FROSTING

1/4 cup unsalted butter, softened

1/3 cup powdered erythritol (or icing sugar)

6 tsp almond milk (or other plant-based milk)

optional: 1 Tbsp cacao powder, unsweetened






Donuts Instructions:

1) Preheat oven to 350 degrees F.

2) In a large bowl, combine all dry ingredients for donuts.

3) In another bowl, beat eggs. Then add in coconut oil and water.

4) Incorporate and mix well with dry ingredients.

5) Fill your pastry bag (or Ziploc) with the donut batter, but not all the way to the top.

Then cut the tip of the bag off. If you fill all the way to the top, it will be hard to squeeze out batter.

6) Spray cooking oil or grease donut tray. Fill donut tray 75% through from the top.

The donuts will rise in the oven. You do not want them to overflow while baking.

7) Bake in the oven for 20 to 30 minutes on the top rack.

Done = toothpick poke comes out clean.



Buttercream Instructions:

1) While donuts bake, make the buttercream frosting. In a bowl, use a hand mixer or a frother to whip together softened butter and powdered erythritol (or icing sugar).

2) Once whipped, add in 6 tsp of almond milk. Whip together.

3) Add 1/2 Tbsp cacao powder and whip. Once clumps of cacao powder are gone, add in the remaining 1/2 Tbsp of cacao powder.

4) Keep whipping it all together until the frosting forms a nice fluffy, stiff peak.

5) Using a spatula, spread on a nice smooth layer of frosting. Can also top with sprinkles.




Darlene's Notes & Tips:

⭐️ If you use erythritol for both the donut and buttercream frosting, you will only consume 1g of sugar. This is a great dessert to make for diabetics.
