When you don't want to spend too much time in the kitchen, roasted veggies are the way to go. Wash. Dice. Place on a baking tray. Roast till timer rings.
They make meal prepping so mesmerizing and incredibly delicious!
Prep time: 5 mins
Cook time: 45-50 mins
Total time: 50-60 mins
INGREDIENTS:
2 purple yams
2 sweet potatoes
1 head orange cauliflower
2 red onions, sliced (white or yellow onions also work)
3 cloves garlic, minced
salt & pepper for taste
cooking oil (I like using light olive oil)
Instructions:
1) Preheat oven to 400 degrees F.
2) Wash, peel and dice potatoes the potatos.
3) Wash cauliflower. Cut into bite-size pieces.
4) Chop onions and mince garlic.
5) On a baking sheet, lay a sheet of parchment paper and grease with a light layer of oil.
6) Scatter chopped vegetables on top.
7) Drizzle a thin layer of oil, and sprinkle on salt and pepper.
8) Let vegetables roast in oven for 45 to 50 minutes. Around last 15 minutes, flip veggies.
9) Let cool. Serve with your favourite dishes or add to your meal prep containers.

⭐️ If you want softer potatoes and yams, I suggest soaking them in cold water for 20 minutes prior to cooking. This removes excess starches that may prevent the vegetable from cooking evenly, leaving a chewy texture.
