I am in desperate need of a sweet snack that will give me that boost energy and satiation factor!
Bring out these NO-BAKE MATCHA BITES (that are also high in protein) 🥰
This is a special recipe because I am using Blume's Matcha Coconut Blend. These are unedited or filtered photos. I love the bold and beautiful colour. Matcha is a super skin food because it is ground-up green tea leaves. This means you'll get access to its full nutrient profile and its distinct aromatic flavour.
I am super impressed by the quality of Blume's products. Their matcha is organically grown, hand-picked, and stone-ground from the Nishio region of Japan. This makes this product such a versatile ingredient. I can't wait to try more of their products and create more colourful recipes like this one!

INGREDIENTS
2 Tbsp extra virgin coconut oil (I used Kirkland brand)
2 to 4 Tbsp honey (adjust according to your likeness)
4 Tbsp plant milk (I used Kirkland organic soymilk)
1/2 cup coconut flour (I used Elan coconut flour from Costco)
1/4 cup almond flour (I used Kirkland brand)
1/4 cup vanilla protein powder
1 Tbsp ( = 3 tsp) Blume Matcha Coconut Blend powder
1 Tbsp whole chia seeds
optional: dark chocolate, 1 to 2 tsp coconut oil (+ 1 tsp honey if needed)
Instructions:
1) Mix coconut oil and honey together until well blended.
2) Pour in all the dry ingredients and mix till well combined. If you want these bites to be less crumbly in texture, you can adjust it by adding plant milk or coconut oil 1 tablespoon at a time.
3) Pour the crumbly matcha mixture into a pop-out ice cube tray or some other mould tray. I used roughly 2 tables of the matcha mixture into each hole. Then I compacted it all together using the back of the measuring spoon. If you don't mind getting your hands messy, you can form them like cakepop balls.
4) Let it sit in the fridge for at least 15 minutes so its shape holds.
5) You can stop here OR make the chocolate pour-over glaze. Using a double-boiler method (refer to the video below) place a few pieces of dark chocolate, honey and coconut oil into a small glass bowl and into the pot with shallow water. This method is to prevent the chocolate from burning because chocolate is very sensitive to heat. Once all melted, remove out of the pot and set aside.
6) By now, the matcha bites have settled and formed nicely. (If you used the poppable ice cube tray) pop them out of the ice cube tray and place them onto a platter.
7) Drizzle as much melted chocolate as you want. You can probably dip the bottoms or even the whole thing in a nice chocolate layer.
8) NOW, ENJOY! I love pairing them with a cup of herbal tea or as a mid-afternoon snack when I feel I need a little bit of caffeine in my system.

Darlene's Notes & Tips:
⭐️ Vanilla protein powder compliments matcha really nicely
⭐️ To make these bites less crumbly, you can add more plant milk or coconut oil 1 tablespoon at a time.
⭐️ If you do not have almond flour, you can swap it out for oat flour.
