One of my favourite shrimp recipes to date!
Similar to my bean salad and just as satiating.
Prep time: 15 mins
Cook time: 5 mins
INGREDIENTS:
1 lb shrimp, cooked and peeled.
1 large cucumber, diced
1/2 red onion
1/2 cup fresh cilantro, finely chopped
1 firm avocado, diced
1 lemon, freshly juiced
1/2 lime, freshly juiced
1 tsp sea salt
1/2 tsp black pepper
Instructions:
1) Chop and dice all veggies. Place into a large bowl.
2) If using frozen shrimp, bring to a boil. Once done, run under cold water and peel the skin. Chop into fours.
3) Juice the lemon and lime. Add to chopped veggies.
4) Toss in salt and pepper.
5) Combine all the ingredients well. Serve immediately.
Darlene's Notes & Tips:
⭐️ If you don't want to cook and peel the shrimp, Costco sells a container of one pound of cocktail shrimp for $14. It is such a great price considering it only consists of water, shrimp and salt. It tastes fresh and it is not overcooked. It is also nicely peeled for you, with only the tail ends intact.
⭐️ I like to chop the shrimp into fours: pinch tail and other end of shrimp together, then slice; slice the middle piece in half. You can also leave the shrimp whole.
⭐️ Store in a tight seal container in the fridge. Should keep fresh for another day.
⭐️ You can definitely swap out the shrimp for another see food like mussels, lobster or fish fillet.
