Stuffed Bell Peppers

Here's a filling, satiating, and low-carb recipe that the whole family will enjoy!




This is one of my favourite meal-prep recipes. Here, I paired it with brown rice pesto pasta and a few slices of olives.



 

Prep time: 15 mins

Cook time: 35 - 45 mins

Total time: 50 - 60 mins

 

INGREDIENTS:


6 bell peppers

(filling)

2 large zucchinis, grated

1 lb ground beef

4 Tbsp olive oil + more if needed

1 medium onion, chopped

4 cloves garlic, minced

2 tsp smoked paprika

2 tsp sea salt

1 tsp ground black pepper

(topping)

sour cream

shredded Monterey Jack + cheddar cheese

optional: chopped parsley



Instructions:

1) In a large pan with hot water, cook and boil ground beef until fully cooked. Drain out the water. Set aside in a large bowl.

2) In the same pan, lightly fry chopped onions and garlic until golden brown. Turn off the stove and toss in cooked ground beef.

3) Wash and grate zucchinis. Combine it with the cooked beef and let it cook for 5-10 minutes on medium heat. It is normal to see water, as this will come out of the zucchini.

4) Season with salt, pepper, smoked paprika and any other spices you like. Place everything in a large bowl.

5) Preheat the oven to 375 degrees F. Prepare a square baking dish with a drizzle of olive oil. 6) Cut the tops off bell peppers and remove the seeds. Place them into the baking dish.

7) Fill up bell peppers with the cooked beef and zucchini filling all the way to the top.

8) Add 1 heaping teaspoon of sour cream on top, then follow with as much grated cheese as you'd like.

9) Bake for 35 to 45 mins until cheese is evenly melted. Broil 3 to 5 minutes until cheese is slightly golden.

10) You can serve this with your favourite garnishes are eat it as it is. Enjoy while it is hot!





Darlene's Notes & Tips:

⭐️ Zucchini is a great vegetable to add because it has a neutral taste. But feel free to add in any other vegetables you like. I suggest chopped tomatoes, canned corn, or even finely chopped cauliflower.

⭐️ Try seasoning the beef with a good taco mix or sloppy joe seasoning if you like more flavour.

⭐️ Common stuffed-bell pepper recipes call for cooked rice mixed in with cooked beef and veggies. Feel free to do so or have it on the side.

⭐️ You can cut the bell peppers in half and fill them up. This way you can have more servings.
